Things I'd like, but really don't need!!!
I also got a 3" springform pan, heart shaped, I was sad that their was only one in the store :(
I wanted to get these heart shaped measuring cups, but I've got a set that goes from 2 cups to 1/8 cup so it would have been a nice unecessary treat
How I would like these shaped canape molds!!! One is heart shaped too!!!
Oh, one other cool thing I got... these heart shaped confetti candies. I made heart shaped Rice Crispies treats for the kids and put some on top. They were thrilled! So I gotta make more for Valentine's day.

Chocolate Banana Cupcakes
1 cup flour
1/3 cup coco powder
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
1/4 cup soft butter
1 egg
1 cup buttermilk
2 mashed bananas
jam for a sweet surprise
Preheat oven to 350F.
Prepare 12 cup muffin tin (I did 12 mini heart muffins and 12 regular)
Mix together flour, coco powder, baking soda, baking powder and salt.
Cream together sugar and butter, add the egg.
Add flour mixture to egg mixture, alternating with buttermilk, in two or three additions.
Add the bananas. Do not overmix.
For Jam if disired, pour batter up to 1/3 of the tin, put 1 tspoon jam of your choice, then cover up to 2/3 of the tin.
Bake for 18-20 minutes.

I love long week-ends!!!
Talked to my lawyer today. We are not sending any more letters to the other party. We are not accepting their ridiculous offer and since they are not answering our counter offer, well things will just have to be as is for now.

Bad mom moment related to the awful weather!
Why do I feel so bad? After checking with the school bus service to see if they were operational, I brought the kids to the bus stop... it took the bus an extra 25 mins and a different driver to show up. By that time their father had come to pick them up, but the bus was behind us so I got the kids out of the car and into the bus!!! Shame on me! As I was being driven to the subway station, I decided to turn around and go back home. So I slept 'til noon (no kidding) and the kids are probably alone in class!!!
BTW, the sleeping 'til noon thing, not good. Since I was home I had planned on attending a bikram yoga class, well it began at noon!!! Oh well, tuff luck. Now I've got just over 2 hours 'til the kids come back, bet they'll be late by a good 30 mins!

What do I do now?
On a different topic, I met with my lawyer today and found out that I was not obligated to pay off the mortgage on my mother's house since her husband was responsible for half of it... what a jerk! The bank led me to believe I HAD to pay for the whole thing.

Mixed feelings!
Anyways, I'm having a ton of stress from my mom's husband. He now wants things that were said to go to me and my sister in the will. What's a will for if it's only to be contested once the person dies??? Sigh. Oh well, I guess I should work for a notary or a lawyer now :p
huuummmm, vacation soon ends!
Time to bake more cupcakes!!! So I made some banana cupcakes. They are YUMMY! So moist! I used a recipe from Cupcakes!. I changed the banana muffin recipe here is my version, low fat and all.
Makes 12 medium muffins (I got 12 medium and 8 small)
1 cup all-purpose flour
1/4 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1 egg white
3/4 cup sugar
1/4 cup maple syrup (hey, I live in quebec!)
1/4 oil
1/4 commercial unsweetned apple sauce
1/2 cup sour cream
2 mashed bananas (about 1/2 cup)
1/2 fresh or canned crushes pineapple (I had fresh on hand and it was too sour too eat)
Preheat oven at 350F and prepare muffin tins
Mix together dry ingredients in a medium bowl
In a large bowl, beat the eggs with the sugar and maple syrup, add the oil and apple sauce, mix well. Add the sour cream until well combined.
Add the flour mixture, DO NOT OVERMIX
Once the dry mixture is well incorporated, add the bananas and pineapple.
Bake for 25 mins or so (check the colour)
